Water slides make surprisingly good race tracks: the banking holds the car through fast corners, and the drops between sections provide the jumps. There is very little grip to speak of, so the track shape does most of the steering.
The luxury cars are heavy, which helps them stay in the channel and hurts on the tighter transitions where a lighter car would change direction.
Levels get steeper rather than longer, which keeps the sense of acceleration through the whole set.
Several cars are available and the lighter ones change direction quickly enough to be worth the reduced stability.
Checkpoints along the slide keep a long descent from restarting entirely.

Do I steer much on the slides?
Less than you might expect. The banking does most of the work, and fighting it is what throws the car out of the channel.
